Italian Sausage with Cabbage, Sweet Potatoes and Apples

From Apple Tasting Day 2019

1 to 1 1/2 lbs. Purely Farm Italian sausage, squeezed out of casing into little balls.
1 (13 1/4 oz.) can chicken broth
1 Tablespoon prepared mustard
1 lb. sweet potatoes, peeled and cut into 1/2 inch chunks
2/3 cup onion, coarsely chopped
1 1/4 lb. green cabbage, shredded coarse (6 packed cups)
1 lg. Golden Delicious apples, quartered, cored and cut into 1/2 inch pieces - Robin used Stayman Winesap and Suncrisp apples. 



Brown sausage in large skillet or Dutch oven. Remove and set aside. 
Add chicken broth and mustard to skillet and bring to a boil. Add sweet potatoes and onions. Reduce heat to medium, cover and cook 5 minutes until potatoes are tender. Add cabbage. Cover and cook 15 minutes, stirring twice, until cabbage and potatoes are tender. Stir in apple. Cover and simmer 3 minutes. Cooking time - 30 minutes.
