Mixed Mash

Surprise your holiday guests with this delicious and healthy twist on mashed potatoes. Change up the ratios based on what your family prefers, 
Serves 4-6


3 lbs potatoes (yukon golds are best for mashing)
1 lb sweet potatoes
1 lb celeriac
1 lb parsnips 
1 c. whole milk or cream
1/2 c. butter
Salt and pepper to taste 
2 T. fresh herbs, like chives or parsley



Peel and chop veggies to even sized pieces. Add them to a large pot, cover them with water, add salt, and bring the mixture to a boil on the stove. Boil until vegetables are tender, 20-30 minutes. Meanwhile, in a small pot, gently heat milk and butter in a small, do not boil! Once vegetables are fork-tender, drain them and return to the pot. Add milk and butter mixture, and mash together using a potato masher or by pushing through a food mill. Add salt and pepper to taste and garnish with fresh herbs. Enjoy!
