Roasted or Grilled Asparagus
Fresh, local asparagus is one of my favorite spring treats and for me the best taste comes through when the asparagus is either roasted or grilled. There are many recipes available and many of them include the addition of strong flavorings such as garlic or cheese, but for asparagus this fresh, I prefer a very simple preparation.
Preheat oven to 400, or heat grill. Meanwhile, break the tough ends off the aspragus spears. Place in a single layer on a cookie sheet, or on a large platter if grilling. Drizzle with olive oil and generously sprinkle Kosher salt and freshly ground pepper and mix well. Roast for about 10 minutes (timing depends on thickness of spears). Check and shake/turn the spears halfway through. If grilling, don't walk away - they can burn quickly. Turn every 1-2 minutes. Remove from oven or grill when starting to char but when spears are still firm. Enjoy!
