
Squash Tomato Sauce
INGREDIENTS
1 medium to large squash (Acorn, Kabocha, or Butternut)
1 Onion
4 cloves of Garlic
1 Apple
3 medium to large tomatoes
2 Tablespoons Olive Oil
DIRECTIONS
Chop all the vegetables. Heat the olive oil on medium low heat in a pan on the stove top. Saute on the onions and garlic for 3 mins, then add the squash for 3 more minutes, then add the rest of the vegetables and saute for another 10 minutes. Puree the sauce in batches in a food processor or blender. Add salt and pepper to taste
