
Turkey Tacos with Quick Pickled Red Onions
Top this spiced ground turkey meat on a tortilla with feta or cheddar cheese or yogurt from Fulper
Farm, and/or fresh greens from the market, and pickled onion (recipe below) and lime.
For the Tacos:
1 teaspoon olive oil
1 white onion, chopped
1 lb. Purely Farm ground turkey
2 garlic cloves, peeled and minced
1 Tablespoon cumin
2 teaspoons chili powder
1 teaspoon oregano
1/2 teaspoon smoked paprika
dash of cayenne (optional)
salt and pepper, to taste
For the Quick Pickled Red Onions:
3/4 cup warm water
1/2 cup red wine vinegar
2 Tablespoons sugar
1/2 teaspoon salt
1 small red onion thinly sliced
For tacos:
Add olive oil to a large skillet and add onions. Cook until translucent and soft, then add the turkey and spices. Break up the meat with the back of a wooden spoon until cooked through and brown.
For onions:
Add water, vinegar, sugar and salt to a jar. Close lid and shake vigorously until sugar is dissolved. Add sliced onion and push down to immerse in pickling liquid. Cover and place in fridge for at least 30-45 minutes before serving. These will keep in the fridge for several weeks, only becoming more soft and vinegary.
